Coconut Lime Rice

A different rice that's delicious with island-type kabobs or other Carribean dishes. I think this will also be good with some pineapple tidbits and/or cherries added. Recipe source: Turtle Bay Cookbook

SERVES 8 -10 (change servings and units)

    Combine water and coconut in a small saucepan and simmer over medium heat for 5 minutes.

    Place a strainer over a small bowl and strain coconut mixture into bowl; reserving liquid, discarding coconut solids. You should have 2 cups coconut milk. Set aside.

    In a skillet heat oil and then add rice, stirring over medium heat until rice changes color (7-10 minutes).

    Stir in the reserved coconut milk and bring mixture to a boil.
  5. 5
    Stir in salt, pepper and lime juice.
  6. 6
    Cover and reduce heat to a simmer.
  7. 7
    Simmer for 20 minutes or until liquid is absorbed.

We really liked this rice! Very nice, mild flavors. Served this with Coconut Shrimp With a Kick - Baked or Fried. Great dinner! Made for ZWT 5.

    wonderful recipe, made it all in my rice cooker and added a hot chile pepper to it just to balance the sweet/tart with a hint of heat.

    Best recipe I've come across for coconut rice--the lime flavor really makes it. Served it with a spicey Carribean chicken dish and curry--excellent!

    I made this and added toasted pecans and coconut prior to serving. I will add more lime juice next time and more red pepper flakes for a kick
