Ingredients

Directions

    With a mixer on medium speed, beat butter, sugar, orange peel and vanilla until smooth.
  2. 2
    In another bowl mix flour, baking powder and salt.
  3. 3
    Add butter mixture and beat on low speed for about 5 minutes.
  4. 4
    Stir in cranberries and coconut.
  5. 5
    Shape dough into 1-inch balls and place 2 inches apart on buttered baking sheets.

    Bake in a 350° oven for 8 minutes.

    Remove from oven and let cookies cool on sheets for 5 minutes.

These are amazing...like a couple of others, I made mine a bit big (made 62 cookies) and needed to bake for 10-12 minutes. I'm resisting the urge to eat them right now instead of saving them for gifts tonight. I made the recipe exactly as printed and wouldn't change a thing!! Thanks...

    Delish! Great flavor on these - first very sweet, then the tartness from the cranberry comes through and evens it out perfectly. Yum! Mine spread really a lot and so ended up very thin. Next time I will try chilling prior to baking to see if I can get better body in the cookie, but the flavor needs no tweaking.

    I was going to post the same recipe. Thanks for posting this keeper, Ruby. Tip from Sunset magazine (where it took grand prize): The mixture will look dry until it comes together as a dough. If it's too crumbly to form into balls, the dough needs to be mixed longer; it should be a smooth, homogenous mass.

    For some reason I have gone crazy this Christmas and decided to make an enormous amount of different kinds of cookies. I chose these because they looked like they would be different from any I had made so far. They are TRULY addictive...I am almost burned out on cookies but these made me crave more! I recommend them hightly. Easy and delish. You won't be dissapointed.Thanks Nancy...these have already become a tradition.
