Coconut Cake

This is great for any party or potlock as it is fast to make and easy to take. I make it in the Christmas season but it always works as it is festive but still simple.

SERVES 8 (change servings and units)

Ingredients

    Heat oven at 180°C.

    Beat eggwhites and sugar until stiff.

    Fold in coconut and nuts.
  4. 4
    Bake in round 26cm tray for 25 minutes.

    Melt chocolate in bain marie and cover the cake with chocolate.

    Decorate with walnut-halfes.
  7. 7
    Serve with whipped cream.
