These muffins are a real treat served warm from the oven, slathered with cinnamon butter...delicious!

15 muffins (approx) (change servings and units)

Ingredients

CINNAMON BUTTER

Directions

  1. 1
    Set oven to 400 degrees.
  2. 2
    Grease the bottoms, or line 2-1/2-inch muffin cups with paper liners.
  3. 3
    In a large bowl, stir together, the flours, brown sugar, baking cocoa, baking powder, baking soda, salt, cinnamon and nutmeg.
  4. 4
    In a small bowl, stir together, melted butter, applesauce, half and half cream or milk (if using), and the egg until well blended.
  5. 5
    Add to dry ingredients; stir with a wooden spoon JUST until dry ingredients are moistened.
  6. 6
    Stir in raisins.
  7. 7
    Fill muffin cups about 3/4 full with the batter.
  8. 8
    Bake for 20-22 minutes, or until the muffins test done.
  9. 9
    Remove from pans to wire racks.
  10. 10
    Cool slightly.
  11. 11
    Serve muffins warm with cinnamon butter.
  12. 12
    To make cinnamon butter: In a small mixing bowl, beat butter, powdered sugar and cinnamon until well blended.

Wonderful tasty muffins Kit!! Made these with Applesauce - had big chunks of apple - perfect recipe for Fall!! Instead of raisins, added about 1/2 cup of mini-chocolate chips! Thanks Kit!

    Sorry, these didn't work for me. I tried replacing the white flour with whole wheat pastry flour-made the muffin too doughy & dry. Thanks anyway!

    Chocolate for breakfast... I think I'm in love! These are fantastic. They have just the right amount of sweetness without being too sweet, which gives them a great deep chocolatey flavor. I decided to use dried cherries in place of the raisins due to personal preference, and my family and I loved the chunks of apple and cherry. They worked perfectly with the chocolate and gave the muffins a wonderful texture. I also used soy milk in place of the cream and Egg Beaters. I can't wait to make these again.

    holy cow. five stars....is not enough! I doubled it....used 1 1/2 teaspoons pumpkin pie spice for the spices, and used water instead of cream or milk. I tossed in a tablespoon of instant coffee granules and thought I'd died and gone to heaven. I can't wait to try it with dried cherries, and I'm sending the recipe to my sister right now!
