Citrus Burst Muffins

This muffin has a great intense orange flavor. Try it, you won't be disappointed!

SERVES 12 , 12 muffins (change servings and units)

Ingredients

Directions

    Preheat oven to 400°F; grease or line a 12 cup muffin pan.
  2. 2
    Combine flour, both sugars, baking powder and baking soda in a medium bowl.
  3. 3
    Combine milk, orange juice, oil and egg in a separate bowl.
  4. 4
    Add liquid ingredients to dry ingredients; stir just until ingredients are moistened.
  5. 5
    Stir in orange flavored craisins and orange peel.
  6. 6
    Divide batter evenly among muffin cups; sprinkle on tops with pecans and sugar.

    Bake for 18-20 minutes or until golden brown.

    Cool 5 minutes in pan then cool on wire rack.

I didn't find these had an "intense orange flavor". I even doubled the orange zest, added 1/2 cup of diced up orange flesh and used fresh squeezed OJ. It might be because I only used a cup of regular sweetened craisins. They are nice and soft. They are slightly floury tasting, not very sweet. I used buttermilk in place of milk. I added 1/2 cup semi-sweet chocolate chips because I like chocolate with orange and cranberries. Thanks for the recipe. Made for Holiday Tag.

    Wow! These were really good! I didnt quite taste the citrus in it but the cranberries added something special. Thank you! Pics to come!

    Because of the comments of the other reviewers, I used thawed frozen orange juice concentrate and upped the orange zest to 1 tbsp. It definitely brought out the the orange flavor more. I'd like to try this again but sub orange juice for all of the milk.

    Made these yummy muffins for breakfast this morning....WOWOWOWOW! I'm going to make another batch for the freezer when I get home. Texture and taste were both excellent! Thanks for sharing!
