Cinnamon Sugar Popcorn

A great quick snack from Cooking Light.

SERVES 8 (change servings and units)

Ingredients

  • 8 cups popped popcorn (popped without salt or fat)
  • cooking spray
  • 2 tablespoons sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 1/2 tablespoons butter, melted

Directions

  1. 1
    Place popcorn in a large bowl.
  2. 2
    Lightly coat popcorn with cooking spray; toss well.
  3. 3
    Repeat procedure.
  4. 4
    Combine sugar, cinnamon and salt in a small bowl.
  5. 5
    Drizzle popcorn with melted butter; toss well.
  6. 6
    Sprinkle with sugar mixture; toss well to coat.

    YUM!!! My 4 yo asked for kettle corn. I made this, and she was very pleased! :o) I used 2 Tablespoons of unpopped popcorn. I put them in a paper bag (sealed with tape) in the microwave. It took a little less than 2 minutes to cook. Then I drizzled a little butter and added a teaspoon of the sugar / cinnamon / salt mixture. Mmmmmmm . . .

    My pantry is almost bare due to the upcoming move but the kids and I wanted a snack. Luckily I remembered a container of popcorn kernels and this recipe. I popped the corn on the top of the stove with a bit of oil (1/2 tbsp). I used splenda instead of sugar and 1 1/2 tsp. of butter instead of the tablespoons. This truly tastes like cinnamon toast on popcorn. Great snack!
