Cinnamon French Toast

Directions

    In a bowl, whisk egg and egg whites until foamy.

    Add the milk, vanilla, cinnamon and nutmeg.

    Combine and set aside. Preheat oven to 200F.
  4. 4
    Lightly spray a nonstick skillet with vegetable cooking spray. Heat over medium hat.

    Dip 4 bread slices into egg mixture, turning to coat. Place bread slices in prepared skillet. Cook until golden brown, turning once.

    Transfer cooked slices to a plate and keep warm in oven.

    Dip remaining slices in egg mixture, cook as above. Divide toast among serving plates.

    Sprinkle lightly with cinnamon sugar and top with maple syrup. Serve immediately.

    Variation: For puffy French toast, prapre egg mixture in a large shallow glass dish.

    Add bread slices, turning to coat. Cover and referigerate overnight. Cook and serve as above.

    We loved this class French Toast recipe. I used farm fresh eggs and soy milk and actually made it twice in 1 day. (First time my daughter and I enjoyed it while my son was at school. But when he got home and realized there was none left...so I made it again!) The first time with raisin bread and the second time with whole wheat bread. My only issue is that there is no indication of how much bread to use. I succesfully used 8 slices and could have probably used 10. That said, there is no way that this for only 1 serving as is indicated. I'd say the recipe is a good basic one that needs some refinement on the directions.

    This is very similar to my family's favorite french toast recipe - it just lacks 1/8 cup sugar. I'm trying to get them to eat a little better, even in heavy dishes like french toast, and this was a good recipe for that. I only managed four slices out of the amount this made, and I used a whole grain and honey bread - not nearly as tasty as white or even wheat, I admit, but another more healthful choice, and this recipe does the job of banishing those cravings very nicely!
