Cinnamon Baked Apples

Quick and easy baked apples are an old-fashioned comfort food. They can be made in the microwave, or baked in the oven. I often make them a little less sweet by using brown rice syrup instead of the honey. Maple syrup is a good alternative as well.

SERVES 2 (change servings and units)

    Core the apples and pare a 1-inch strip of skin from around the middle of each to prevent splitting.

    Place the apples in two 10-oz custard cups.
  3. 3
    Pack the raisins into the apples.
  4. 4
    Mix the honey and cinnamon, pour over the raisins and into the apples.
  5. 5
    Top with butter.
  6. 6
    Cover tightly and microwave on high (100%) until tender when pierced with a fork, 3 to 4 minutes. If you prefer, they can also be baked at 375°F for 30 minutes.

    Serve warm with cream, if desired.

This was marvelous! My hubby and I had surprise guests after church, so we went to Zaar and found this wonderful recipe. We used dried cranberries instead of the raisins. It came together quickly and beautifully and drew rave reviews from our guests! We have added this to our Thanksgiving dessert list - which is perfect for our family who need gluten-free foods.

    My mom has talked before of how this was her mother's go to dessert when she was a kid. When I saw the recipe on Zaar I had to try it. Delicious! A little helping of vanilla ice cream makes this a delightful dessert.

    easy and delicious! I made a small variation and added a touch of nutmeg (about 1/8 tsp) with the cinnimon and topped with a few chopped pecans - decadent!

    Delicious and somewhat healthy! I wasn't sure if they needed to be wrapped individually in the oven too. They came out fine unwrapped, just a little bit underdone. Vanilla ice cream would be great on the side or even vanilla whipped cream!
