What a versatile, flavorful rice! I'm not usually a huge fan of rice, but this really adds a lot of flavor to anything from mexican to chinese dishes.

Easy recipe and went well with a Mexican dinner I cooked. I did add some extra lime juice only because we like the taste of lime. I recommend this for your next Mexican dinner.

Thank you for this recipe! My favorite burrito place (Qudoba) uses lime rice and I'm trying to replicate my favorites at home. I used 1 cup of rice (uncooked) 1 lime 1 T dried cilantro (approx)and I think it turned out just right.
