Christmas Meringue Cookies
2 1/2 dozen cookies (depending on size)
Ingredients
- 2 egg whites
- 1/8 teaspoon cream of tartar
- 1/8 teaspoon salt
- 3/4 cup sugar
- 1 (6 ounce) package semi-sweet chocolate chips
- 1/2 cup crushed candy cane
- 1/2 cup nuts, chopped
- 1/2 teaspoon vanilla
Directions

Whip egg whites until frothy.2
Add cream of tarter and salt; whip until stiff and dry.3
Add sugar, beating constantly until very stiff.4
Fold in chocolate chips, crushed candy canes, nuts, and vanilla.5
Drop by spoonfuls onto heavy brown paper.6
Bake at 300 degrees until the meringue sets.7
Cool.8
Remove from brown paper.

There are REALLY different. We used pepermint candy canes, and WOW what a mint flavor.

These cookies were wonderful and so easy to make. Everyone raved about them, I had to make four batches. Two with candy canes and two with coconut. I left out the nuts in both and lightly sprinkled some colored sugar on top too. I had to give the recipe to about six people. Even DH loved these and he's not a dessert person at all.

I thought these were a delightful addition to cookies I give out at Christmas. I used the blender to crush the candy canes. Next time I would either leave out the chocolate chips or use mini chips. Nice and pink as they are I may make them again for Valentines Day.

These were fun to make and are wonderfully light. I had to make two batches because my kids each picked out different candy canes to make them. On the first batch I didn't beat the egg whites long enough before adding the sugar, the second time I beat them stiffer and it turned out great. These are very appealing to look at, a friend that stopped by saw these while they were cooling and immediately asked me for the recipe.
