Great at Christmastime! Red and green colors make this salad so festive! So easy to make and looks great in a trifle dish or glass bowl.

SERVES 16 (change servings and units)

    In a large bowl, combine the first five ingredients.

    In a small bowl, combine the mayonnaise, cider vinegar and pepper until smooth. Pour dressing over broccoli mixture; toss to coat.

    Cover and refrigerate until serving.

This is a beautiful salad. My kids love broccoli, but every time I make a salad like this they won't eat it....but this one they did. I did however leave out the pecans, I didn't think the kids at Christmas would eat it with nuts (maybe next time I can trick them). I think next time though I may cut the red pepper in half and a some cauliflower to it. Thank you for a great salad...it's a keeper.

    Just as advertised - a beautiful Christmas dish and healthy for you. We used non-fat mayonnaise to reduce the fat count. We prepared all the ingredients the day before and kept them in separate containers in the refrigerator over night. It made for quick assembly for our luncheon the next day. We were amazed that anything this simple could taste so good.

    This recipe is similar to mine. I use white balsamic vinegar, this keeps it form looking brown, as using cider vinegar does. I also shred carrots, and use sunflower kernels. Nexy time I make it I am going to use pecans for a nice change.

    Oh, this is so Christmasy with the red peppers! Love the taste, although I did add a little sugar, I'm used to a sweet tart taste. Thanks! Made for Please Review My Recipe game.
