These are made using yogurt, I sometimes use vanilla yogurt. They freeze well. For smaller muffins use a tin for 18 muffins.

SERVES 12 , 12 large muffins (change servings and units)

    Preheat oven to 375F and line a 12 piece muffin pan with paper cups.

    In a large bowl mix the dry ingredients.
  3. 3
    I a medium bowl mix the wet ingredients.
  4. 4
    Fold the wet ingredients gradually into the dry ingredients with a spatula.
  5. 5
    Do not over-mix!
  6. 6
    Spoon the batter into the muffin cups.
  7. 7
    Bake for 20 to 25 minutes or until tops spring back when touched.
  8. 8
    Do not over-bake!
  9. 9
    Remove from the oven, let them stand for a few minutes, then remove from the tin to let them cool.

the perfect chocolate chip muffins! I made these for my daughters class and everyone loved them. I used regular sized tins and vanilla yogurt. Looking forward to making these again, so is my daughters class! Thanks for posting

    Made these with my 4yr old son who loves baking. Very quick and easy. I used apricot yoghurt because it was all I had, and added 1/4 tsp of cinnamon. They turned out great! Thanks

    Finally a muffin recipe that fills my pans with the size of muffins I want! And the texture was perfect - crunchy tops and tender centers.

    Yum Pets... these are dissapearing fast ! I used regular muffin pans and 12 muffins would have been SO big that they would have all joined up on the top, so used two muffin pans and got 18 regular sized muffins. I can taste the difference using yogurt and it's nice.. and soo easy to throw together and bake. Phew these were HOT when they came out of the oven, (yes, I know it's the oven, and it gets hot LOL) but even after 20 minutes cooling I used an oven glove to set them up for the photos, so if there are any particularly small sets of hands in your household, do put the cooking rack in safe place. The taste is lovely and the muffin is soft and moist without having any undercooked texture, and I'd make these again no problem at all. Please see my rating system, a lovely 4 stars Thanks !
