Chipotle's Basmati Rice

Great recipe to go on or with any Mexican dish.

SERVES 4 (change servings and units)

Ingredients

Directions

    In a 2-qt. heavy saucepan, heat oil or butter over low heat, stirring occasionally until melted.

    Add rice and lime juice, stir for one minute.
  3. 3
    Add water and salt, bring to a full rolling boil. At boiling, cover, turn down to a simmer over low heat until rice is tender and water is absorbed, about 25 minutes.

    Fluff rice with a fork and stir in cilantro.

I have never eaten at Chiptole's, but this was a nice change of pace from plain basmati rice.

    This was great! We just got back from vacation where we were able to have chipotle's a few times and my husband was greatly missing it already, since it is one of his favorite places to eat. So since I was making a southwest crockpot chicken today I figured I would make this rice to go along with it, and put it all in a burrito. It turned out great even though I only had minute rice on hand. I just made as stated but obviously for much less time. I combined that along with the southwest chicken, guacamole, and red onion to make some great burritos! They would really have been great with some sour cream and cheese too, but we are on a no dairy diet right now.

    Excellent copycat recipe! This recipe was very close to Chipotle's rice...about 95% of the flavor. Thank you for the posting! NOTE: I will double this recipe in the future, as I did not seem to get 4 servings from the listed ingredients.

    I don't live near a Chipotle's, but my sister does and she raves about the rice. I tried this recipe this evening for the family and we liked it well enough. I like the tang the lime gives the rice-something a little different.
