Chinese Style Kale

Since starting on my healthy eating journey, I have discovered that I really like kale. I would never have even entertained trying it before but it has become a regular on my plate. However, I am always looking for new ways of eating it rather than steaming it. I found this recipe in the February 2008 copy of BBC Good Food Magazine and it looks like a good alternative to my usual preparation.

SERVES 2 -3 (change servings and units)

Ingredients

Directions

    Heat the oil in a large wok or frying pan.
  2. 2
    Tip in the garlic and cook for a few seconds.
  3. 3
    Throw in the kale and toss around the pan to coat in the garlicky oil.
  4. 4
    Pour over boiling water and cook for 7 minutes more until the kale has wilted and is cooked through.
  5. 5
    Stir in the soy and oyster sauces and heat through to serve.

I used olive oil and a little less than called for, and really enjoyed this with the Chinese sauces. Nice change for us and DH loved it too!

    If you like kale you will enjoy this recipe! I am learning to like it! I reduced the oil to1 t and it worked fine. The kale did taste a bit bitter to me so I used a trick my Grammy used when I was small and did not like a veggie- I added a sprinkle of sugar! Removed that bitter bite- I am just not a fan of that though many are. Thanks for a simple and easy recipe that is so healthy!

    This is a wonderful way to fix your greens - it had a great flavor. I used chard, less oil, more garlic, and just stir fried it. I also drizzled the soy and oyster sauces over it, so the amounts were maybe half. We'll definitely be making this again!

    Really quick and tasty. I did double the garlic though, as I am a garlic fiend.
