Chili's Boneless Buffalo Wings--Copycat

Recipe #52064 | 45 min | 30 min prep | add private note

By: dayla
Jan 21, 2003

This is a copy cat recipe from Todd Wilbur and his Top Secret Recipe site. I made these for my husband and I and they are just like the ones from Chili's. So good, I am sure you will enjoy them. It is a little time consuming but worth every second.

SERVES 2 (change servings and units)

Ingredients

On the side

Directions

  1. 1
Combine flour, salt, peppers and paprika in a medium bowl.
  2. 2
In another small bowl, whisk together egg and milk.
  3. 3
Slice each chicken breast into 6 pieces.
  4. 4
Preheat 4-6 cups of vegetable oil in a deep fryer to 375 degrees.
  5. 5
One or two at a time, dip each piece of chicken into the egg mixture, then into the breading blend; then repeat the process so that each piece of chicken is double-coated.
  6. 6
When all chicken pieces have been breaded, arrange them on a plate and chill for 15 minutes.
  7. 7
When the chicken is done resting, drop each piece into the hot oil and fry for 5-6 minutes or until each piece is browned.
  8. 8
As chicken fries, combine the hot sauce and margarine in a small bowl.
  9. 9
Microwave sauce for 20-30 seconds or just until the margarine is melted, then stir to combine.
  10. 10
You can also use a small saucepan for this step.
  11. 11
Just combine the hot sauce and margarine in the saucepan over low heat and stir until margarine is melted and ingredients are blended.
  12. 12
When chicken pieces are done frying, remove them to a plate lined with a couple paper towels.
  13. 13
Place the chicken pieces into a covered container such as a large jar with a lid.
  14. 14
Pour the sauce over the chicken in the container, cover, and then shake gently until each piece of chicken is coated with sauce.
  15. 15
Pour the chicken onto a plate and serve the dish with bleu cheese dressing and sliced celery on the side.

As someone who refuses to fry anything, I took a chance on these wings since I had a strong craving for wings but didn't want to go out to eat. Awesome choice! The topping was crunchy, yet the chicken was moist and delicious. My husband, who is a wing specialist, raved about how they were better than most restaurants. Will definitely make again when I'm ready to use that much oil again.

WHY, WHY did I bake these and not fry them? I took the advice from some reviews here that said they came out awesome after baking. Nope. Sometimes frying is just a must, even though not as healthy. 4 stars for now, just because of the baking method I followed, but I'll fry them and update the recipe to 5 stars I'm sure, because the taste was right on. The texture was not. ****UPDATE: I made these again, but fried them this time...oh my goodness - delicious. Made a triple batch for a party appetizer and they flew off the plate! PERFECT!!!

This recipe is so good! I actually don't like to fry anything so I baked them instead at 375 in my oven for about 45 minutes. They were crispy and they came out perfect!! My fiance loves them so much he makes me make them at least once a week!! I also mix them in the sauce and then place back in the oven for another 5-10 minutes to let the sauce really soak in. I served with extra sauce as well. Perfect!!!

wonderful! I used chicken tenders and cut them into thirds. I breaded them exactly as written and then baked them at 425 for 15-20 minutes. I tossed them in the sauce in a large bowl. They were great - better than Chili's! I will be making them again. I have already been thinking of other sauces to toss the nuggets in - BBQ, honey mustard, honey, the possibilities are endless.
