Very easy. The longer you cook it, the better it gets.

SERVES 8 (change servings and units)

Ingredients

Directions

    Heat the vegetable oil in a pot over medium heat. Add onion and garlic. Saute until the onion is slightly softened.

    Add spices and saute a minute or two longer.
  3. 3
    Add potatoes, carrots, chickpeas, tomatoes, and vegetable broth. Simmer on low heat until potatoes are tender.
  4. 4
    Add additional vegetable broth if needed to cook the potatoes.
