Chicken and White Bean Soup

Easy and delicious! I like to garnish with Monterey Jack cheese and lime wedges.

SERVES 6 -8 (change servings and units)

Directions

    Using a blender, blend one drained can of white beans with 1 cup of water until smooth.

    Saute onions, peppers and garlic in butter over medium-high heat until golden brown.

    Transfer to a crock pot.
  4. 4
    Place the remaining ingredients except the chicken and garnishes into the crock pot and cook on low for 3 hours.

    Add the chicken and keep warm on low until ready to serve.
