I received this recipe from my sister and it is one of the favorite dishes in South Louisiana. It is certainly one of our favorites.

SERVES 6 (change servings and units)

    Make a roux with oil and flour.

    Add onions, garlic, green pepper and celery.

    Cook until tender.

    Add all other ingredients and cook until game is tender.
