From the Weight Watchers New 365 Day Menu Cookbook, this sounds really good.

SERVES 4 (change servings and units)

Ingredients

Directions

    In small cup or bowl, combine salt, pepper, cinnamon and ginger; rub into chicken.

    In large nonstick skillet, heat oil; add chicken.
  3. 3
    Cook over medium-high heat, turning once, 4 minutes, until browned on all sides.

    Remove chicken from skillet; set aside.
  5. 5
    In same skillet, cook onions, stirring constantly, 5 minutes, until softened.

    Stir in apples; cook, turning apple slices occasionally, 3 minutes, until apples are golden brown and tender.

    Add cider to apple mixture; bring liquid just to a boil.

    Return chicken to skillet; cook, turning chicken as needed, 4 minutes, until chicken is cooked through and juices run clear when pierced with fork.

    With slotted spoon, transfer chicken to serving platter; keep warm.

    Stir brandy into apple mixture; cook 3 minutes, until mixture is bubbling and apples and onions are glazed.

    With slotted spoon, arrange apples and onions around chicken; drizzle evenly with remaining juices in skillet.

    SERVING (3 OUNCES CHICKEN, 3/4 CUP APPLE-ONION MIXTURE) PROVIDES: 1 Fat, 1 1/2 Fruits, 1/2 Vegetable, 3 Proteins, 20 Optional Calories.

This is a very good dish. We served it over brown rice. I didn't have any apple brandy, so I used regular. The taste was still very good with the cider. I didn't care for the apple because it was too mushy in texture for me. DH liked it as is. I'm picky. I would change the apple to a firmer one next time and maybe add some pecans to the mixture. Made and reviewed as recipe of the day in Comfort Cafe - Thanks!

    We enjoyed this easy dish. Wonderful flavors. I used 2 large pinata apples which kept there shape. Yum! Comfort cafe suggested this and a good suggestion it was. Thanks

    WOW, this is SO good! Personally I wouldn't change a thing. The chicken was very moist and tender. I made 2 servings and accidentally used 1/4 tsp of cinnamon instead of 1/8 but that worked well for me (so maybe I would change that one thing). The flavors work so well together that you feel like it's fine dining at an expensive restaurant. Kudos for this one. Made for Comfort Cafe, Jan 09.

    Very good recipe and very healthy too. This fit perfectly into our "eat healthy in 2008" resolution. My boys and I would have liked it to be spicier (our choice) and next time will probably add some red pepper flakes. Made for Comfort Cafe Tag 2008.
