Chicken Tortilla Soup

This soup is quick to make, flavorful, and filling! Serve with warm corn bread or tortillas. This also freezes well.

SERVES 6 (change servings and units)

Ingredients

    In a medium stock pot, saute onion and garlic in oil.
  2. 2
    Stir in chili powder, oregano/Italian seasoning, tomatoes, broth and water.
  3. 3
    Bring to boil and simmer for 5 to 10 minutes.

    Add corn, hominy, chili peppers, beans, cilantro, and chicken. Simmer for 10 minutes.

    Ladle soup into individual serving bowls and garnish with avocado, grated Jack cheese, chopped green onion, or crushed tortilla chips.

    This recipe is a staple in our Freezer Friends cooking group. Members ask me for their own copy to make at home. We have all really enjoyed this soup! That's more than 6 families!!

    This was very easy to make and tasted delicious. The fresh cilantro, avocado and jack cheese really made it flavorful. I also added a tsp of cumin. Will definitely make this again. Thanks, Tonkcats

    I had so much fun makeing this! I did make a few changes though. I chopped bell pepper and sauted that with my onion and chillies, plus a chicken bullion cube and fresh garlic. Then I poured in 2 1/2 cup chicken broth 1/2 cup of water, the chicken, beans, hominy, diced tomatoes, mexicorn,extra garlic powder, oregano, salt, pepper, and chili powder, and I just let it simmer for the afternoon, what a great smell!! I cut up corn tortillias and fried them, then served them with the remaining garneshes, yummy! We have a keeper!
