Chicken Taco Rice

This is my Mom's recipe. It's really good, plus it's easy to prepare when you don't have a lot of time to cook dinner!

SERVES 4 (change servings and units)

Ingredients

Directions

    In a large skillet, cook and stir chicken in hot oil until lightly browned.

    Add water, tomato sauce and seasoning mix.
  3. 3
    Bring to a boil.
  4. 4
    Reduce heat, cover and simmer 5 minutes.
  5. 5
    Add corn and red bell pepper.
  6. 6
    Bring to a boil.
  7. 7
    Stir in rice.
  8. 8
    Cover; remove from heat.
  9. 9
    Let stand 5 minutes.
  10. 10
    Fluff rice with a fork.
  11. 11
    Sprinkle top with cheese.

    Serve with tortilla chips or hot floured tortillas, if desired.

I keep precooked shredded chicken in the freezer so I used that. I doubled the recipe but didn't use the pepper. I also used canned white corn instead of frozen. I used 2 cups of mexican blend cheese and 2 cups of brown rice. We thought it needed more seasoning so I added another packet of taco seasoning. My family also put hot sauce on their serving. We enjoyed this for something different. It was a quick, easy meal.

    This was a great quick meal. I only made 2 servings and substituted green pepper and half an onion for the corn and red pepper. I also used brown rice instead of white. I will definitely be making this again.

    This was really good and really easy. I added fresh chopped tomatoes at the end and I was out of sour cream, but next time I'm going to add that as well. I think that would make it perfect. Oh and don't be worried about the amount of taco seasoning....it smells really really spicy when you pour it in...scared me a lot! But it ended up being nice and mild but with a little bite. this is definatly a keeper.
