This is one of our favorites - make it almost weekly!! Preparation time includes marinade time.

SERVES 4 (change servings and units)

Ingredients

    Place the chicken in a bowl and add oregano, garlic powder, seasoning salt and pepper.

    Toss to coat.
  3. 3
    Marinate in fridge for at least 30 minutes -the longer the better.
  4. 4
    In the meantime, if you are going to use wooden skewers, soak them for 30 minutes. This prevents them from burning on the BBQ.

    Squeeze the lemon and then add an equal amount of vegetable oil.
  6. 6
    Skewer chicken onto wooden or metal skewers.
  7. 7
    BBQ chicken skewers until done.
  8. 8
    Mix the oil and lemon mixture until "creamy" and drizzle over the hot chicken - do this as soon as they come off the grill.

    Serve and enjoy!

    **on a side note - if you own a George Foreman, grill this recipe works very well on it!

I knew I wasn't going to marinate for more than 30 minutes, so I just put all of the ingredients into a ziploc bag at the same time. I broiled it, and it turned out great. Thank you.

    Awesome recipe! Going in the keeper file. We had it in pitas, with toms, cukes, red onion, tzaziki and hummous, Yum!! Thanks for the great recipe!

    This was SO good! I marinated the chicken for several hours, adding the lemon/oil mixture to the marinade instead, and cooked it all up on the stove. I also used less oil and it was still perfect. I'm definitely making this again, but at least doubling the recipe! It was actually great with a creamy pasta and I can't wait to make it for a variety of meals too.

    We're on The South Beach eating plan so I had to tweak this just a bit by using kosher salt and olive oil. Because of personal preference, I used chicken tenders. My Dh took one bite and raved about this chicken. I misread the recipe (hanging my head in shame) and made an 'accidental' tweak.....I added the olive oil and lemon juice to the marinade. No harm done! The tenders were juicy and beautifully flavored. I then prepared more of the lemon juice/oil mixture and brushed a bit on each tender before serving. We were in Heaven! Next time (and there will be many next times) I will serve it with Greek salad, hummus and pita. Note: Due to inclement weather I broiled them in the oven....they were perfect!
