Chicken & Shitake Mushroom Basil Pesto

My brother and I just made this up!! It's Soo Good and Soooo Simple!! Does not include cooking/prep time for pasta and pesto sauce

SERVES 4 -6 (change servings and units)

Ingredients

Chicken

Mushrooms

Directions

  1. 1
    Heat oil and butter over med high heat. Add chicken and cook till golden brown on both sides.
  2. 2
    Remove from heat and cut into bite size pieces. Set aside.
  3. 3
    Heat oil over med high heat. add garlic. Saute till garlic starts to turn golden. Add Mushrooms and saute till mushrooms are nice and soft.

    Add chicken and let flavors blend 3-4 minute.
  5. 5
    Add Basil pesto and saute 3-4 min more.
  6. 6
    Toss with pasta and serve immediately!

I made this today, but instead of over pasta, I put it in a spinach wrap, w/red sweet pepper, & a mozz. cheese slice. Yum.

    Absolutely fantastic and easy to make. I did a basic pesto with 2 cups of basil, oil, 1/2 pine nuts and some parmesan cheese. I did not serve it over pasta to decrease the carbs, but it was so yummy.
