SERVES 6 , 30 skewers (change servings and units)

Directions

    mix first 8 ingredients, remove 3/4 and refrigerate.
  2. 2
    cut chicken into strips and marinate in remaining sauce for 1 hour.
  3. 3
    heat broiler, thread strips onto skewers and broil about 6 minutes.
  4. 4
    bring refrigerated sauce to room temp and use as a dip for the chicken.

    Very Yummy. I use a little bit more soy sauce in our sauce (like 2 1/2 tbsp.) and lite coconut milk. I usually make the sauce a few hours ahead of time and store in the fridge, I love how the flavors come together after it sits for awhile. After grilling the chicken I take it off the skewers, warm up the sauce and serve it all together over jasmine rice and steamed veggies. This is a new favorite for my husband and I. Thanks!

    This recipe is fantastic. I made this for dinner last night. I didn't have lime juice so I made it without. I made a couple of alterations to suit my preference. I didn't use skewers because I'm not a fan of them. Also, after broiling the chicken, I heated the extra sauce in a sauce pan and place the chicken strip in the saucepan. I served it over hot rice. It was great. Thank you for sharing this recipe.

    This was great! I made a couple of changes with crunchy peanut butter and coconut cream instead of milk. I served the chicken in rice wrappers with chopped fresh mint, rice, and the AMAZING peanut sauce!! Thanks Chia, we really liked this.
