Chicken Salad for Sandwiches

Simple old-fashioned chicken salad which is perfect for sandwiches or stuffing tomatoes. Although the recipe calls for boiling uncooked chicken leftover chicken would also work fine and give wonderful flavor to the chicken salad. Recipe source: local newspaper

    Place chicken, celery stalk and onion in saucepan with water to cover.

    Bring to a boil and simmer 20 minutes or until chicken is done.

    Drain and discard onion and celery.

    Let chicken cool.

    In a food processor chop chicken.
  6. 6
    In a medium sized bowl combine chicken with mayonnaise, salt& pepper, parsley, dill seed, chopped celery and lemon juice.

    Cover and refrigerate until chilled.

I wanted a real chicken salad recipe and this fit the bill perfectly. I added 1/2 cup diced onion, as one reviewer suggested and it was awesome. The dill and lemon juice were perfect in it. This recipe is a keeper and I will use it again and again! Thank you!

    Very good! I think the difference in this recipe is the chopping the chicken in the food processor. Makes the consistency perfect for sandwiches. My family loved it! Thanks for posting.

    Ellie, this is very good and easy to put together. I really didn't measure the mayo. Did not have the dill seed but did have dill weed. Used about 1/2 tsp of the dill weed. This is a down to earth chicken salad recipe and the ingredients and flavors compliment each other nicely. Thanks for sharing.

    I was looking for a no frills but delicious chicken salad and this is it! Very good and easy to put together. I added 1/4 cup of chopped onion but besides that left the recipe as it was. Delicious!
