This is a delicious panini. Chicken salad, leftover roasted veggies (Roasted Vegetables), and Provolone cheese. Put this on homemade bread (Anadama Bread) and you have one yummy lunch.

1 sandwich (change servings and units)

Ingredients

  • 2 slices of homemade bread
  • 1/2 cup chicken salad (your choice)
  • 1/2 cup roasted vegetable
  • 1 sliced provolone cheese
  • mayonnaise (as desired)

Directions

  1. 1
    Spread bread with mayonnaise on the inside and a little butter on the outside.

    Put one slice on the panini gridddle.
  3. 3
    Add the cheese, chicken salad, and veggies.
  4. 4
    Put top slice of bread on and grill.
