I loved this recipe and Im very picky about my chicken salad! I doubled the recipe using some chicken breasts I roasted in the oven, opted for seasoned salt, added a tbsp of lemon juice and added 2 heaping tbsp of sour cream and 1 tsp of prepared mustard in addition to the 1/2c of mayo for the doubled recipe as I felt it was a tad dry and needed a tiny bit of zip. Served on homemade wheat bread and everyone loved it! Thanks for a great recipe!

    This makes a really excellent chicken salad. My husband and I really enjoyed having this for lunch today. We subbed grapes cut in half for the hard-boild eggs and left out the onions and it was fantastic.

    I made this salad with leftover roasted chicken and it was absolutely wonderful. It made a great lunch served on lettuce with tomatoes, cukes, and melon on the side.

    YUMMY! I made this this morning with leftover chicken. I used the seasoning salt and fresh gound black pepper in place of the lemon pepper, as I did not have any on hand, doubled the recipe and upped the mayo by a few tablespoons, I'll be serving this on my homemade buns tonight. Thanks for sharing Sue!...Kitten
