I don't know where this originated. There are several chicken and rice recipes out there. I actually have a couple. This is one that I have made forever. My daughter, Jenny, loves this. She requested that I post it. There are 2 methods - oven and crockpot - each requires the recipe to change just a tad.

SERVES 4 -6 , 1 9x13 casserole (change servings and units)

Ingredients

Directions

  1. 1
    OVEN METHOD:.
  2. 2
    Preheat oven to 350 degrees.
  3. 3
In a greased 9x13 casserole dish, layer chicken breasts. You can use as many breasts as desired.
  4. 4
    Combine soups with water.
  5. 5
Pour soup mixture over chicken. Then layer rice over this. Pour melted butter over this.
  6. 6
Cover & bake at 350 degrees for approximately l hour, then uncover and bake approximately 30 minutes more, or till all liquid is dissolved.
  7. 7
    CROCKPOT METHOD:.
  8. 8
    Grease crockpot with cooking spray.
  9. 9
Layer chicken, soup&water combination, rice, and melted butter.
  10. 10
Cook on low 5 to 6 hours.
  11. 11
***This is great for covered dish (potluck) dinners, to take to a bed-ridden friend, etc. It can go many places and is quick and easy!

Good basic recipe. We had to doctor it up a bit with salt, pepper, garlic seasoning. We replaced one can with brocolli and cheese soup an dadded a can of chicken gravy. Recipe not clear on the water OR butter amount. Please edit if possible. We cooked in a crockpot and it was good with white rice.
