I've made these twice now, and have to double the recipe each time. I use the Taco Bell brand of taco seasoning and refried beans. I also used Tyson's precooked frozen chicken to save time. My husband loves them with a lot of the onion and cilantro, he even shared some at work and got raves. My kids like them with just the bean/chicken filling, no extra onion or cilantro. A new regular at our house.

This is the best quesadilla recipe I have even eaten. It is defiitely a favorite at my house. It is helpful to have someone to lend you a hand when you are adding the chicken/bean mixture to the tortillas.

I made two of these for my husband! He ate every last bit! He told me to give it five stars..and he's never rated anything five stars before!!! I think a lot of it had to do w/ the fact that these are fried. He loves anything fried. So yes, I will be making these again. The only thing that I changed was instead of using green onions, which I didn't have, I used reg. onions and added them to the chicken and taco seas. mix. I let them simmer. Also, I used just a little sprinkle of bottled cilantro. Obviously, everything worked out! Thanks for this easy and tasty recipe!
