Great looking chicken. Looks like you fussed but you didn't. Good with bread and a salad.

SERVES 4 (change servings and units)

Ingredients

    Lightly grease a baking sheet.

    Put breasts on the baking sheet.
  3. 3
    Spread each with 1 tbsp tomato paste.
  4. 4
    Combine ham, mushrooms, red pepper, tomato, garlic, onion and basil.

    Spoon mixture over breasts.

    Top with cheese.

    Bake at 350F for 30 to 40 minutes or until chicken is cooked and cheese is golden.

    Chicken Pizzola used to be my favorite dish when I went out to eat (before I started cooking). I was happy to find this recipe. I loved that it was so simple to make. I added a layer of pepperoni to the chicken after the tomato paste. I highly recommend this addition of pepperoni. Also, I used fresh basil from my garden. MaeEast, I would recommend this recipe to everyone! My BF loved this recipe. Yummm!

    We really enjoyed this. I substituted some diced hot pepperoni for the ham, cheddar for the mozzarella and added in favourite pizza toppings including green peppers and parmesan. The result was just delicious, we will be making this again. Thanks for sharing the recipe MaeEast.

    You did it again MaeEast, another great recipe. I am going to share this one with a friend of mine, whose husband really watches his diet because of a previous heart attack. This is such a healthy recipe! I will salt and pepper the chicken before adding topping next. The mixture that you spoon over the top is good just by itself. I will try to think of other ways to use that topping. Thanks MaeEast! Pick a Chef June 2004
