Chicken Pineapple Stir- Fry

A colorful, delicious stir-fry that will have you out of the kitchen in a hurry.

SERVES 6 (change servings and units)

Ingredients

Directions

    Mix first 7 ingredients with reserved 1/4 cup pineapple juice in small bowl.

    In large skillet, stir-fry chicken in hot oil 5 minutes.
  3. 3
    Add vegetables, stir-fry 4 more minutes.

    Stir in pineapple and sauce, heat through.
  5. 5
    Serve over rice.

My husband really liked this one! I used a whole can of crushed pineapple with the juice. I used sugar pod peas (fresh from the garden), frozen broccoli, some finely sliced onion and 2 pinches of crushed red pepper for the veggies. Great flavor and pretty simple to make. Thanks!

    Very Good & EASY to prepare in a hurry!! I doubled the pineapple (20 oz) and follow the rest of the recipe exactly. Very impressive dish will make on a regular basis

    When I say to my family "Another new recipe!" they are very apprehensive and uneasy until they actually take that first bite. However, this combination of home made sauce and vegetables burst forth a gusto flavor they loved. I reluctantly doubled the sauce so it would soak into the rice below and I was so glad I did. The strange combination of ingredients, with "2" tablespoons of minced garlic, I just couldn't see how it could taste good. But wait, it was REALLY, REALLY gratifying! Now I am concerned that they enjoyed it so much they will not want to go back to package kind! Thank you for sharing this recipe; the pineapple was an awsome addition!

    This was exactly what I was looking for. I was searching for a sweet and sour chicken stir-fry to replace the frozen boxed convenience kit from the grocery store and this was great! A tasty sweet & sour sauce that went great with the pineapple. I served it with brown rice and my hubby says it's better than the boxed version. Thanks for another keeper, MizzNezz!
