Chicken Pesto

This was my daughter's favorite dish (along with some of her friends). She enjoyed it so much that we had to make it a weekly recipe.

SERVES 8 (change servings and units)

Ingredients

    Prepare pesto sauce according to package direction.

    Heat oven to 350 degrees.
  3. 3
    Spray rectangular dish (9 by 12 inch) with no-stick spray.
  4. 4
    Moisten chicken with water, shake off excess, and coat complete with bread crumbs.
  5. 5
    Place chicken in baking dish.
  6. 6
    Spread pesto sauce evenly over chicken breasts.
  7. 7
    Cover each breast with ½ slice of provolone cheese.
  8. 8
    Spread mushrooms over cheese.
  9. 9
    Bake in oven for 45- 50 minutes.
  10. 10
    Serve with pasta.

AMAZING! My husband is quite the critic. He loves food and especially flavors. This is his favorite dish I've ever made. I took the recommendation to put cheese on top of mushrooms, and it was great. Moist chicken, plenty of flavor, and a well rounded dish. Thanks, Karen!

    i sauted the mushrooms first, then put them on the chix then the cheese so the mushrooms would stay put. i also wrapped the dish with foil. i couldnt find any pesto mix, just the stuff in the jar so i just put half of it in. we ate the chicken pesto alone, but next time we will put it on noodles so it can soak up some of the pesto. very easy to make. will make again. also tried this with a creamy pesto mix. cut chix in cubes and put the mix in with the chix. put it on noodles, delicious! pesto mix is cheaper than the stuff in the jar. it was 5.99 a for tiny jar here!

    Scrumptious! What an easy yet delicious dish! My husband loved it as well. I dipped it in melted butter prior to the breadrumbs and served it with parmesan & garlic pasta. It was extremely moist. We'll make -and recommend- this dish often! Thanks!

    Very good. Now a family favorite. Just wish I'd quit losing my printout and having to print it yet again. I make as instructed, except cover loosley with foil for the first half to prevent cheese overbrowning. My husband will be so happy it's on the menu again tonight. He loves to take it to work leftover the next day. Thanks very much for a new family staple!
