Chicken Parmesan - Low Fat

A quick, easy & healthy version of one of my favourites; I usually serve it alongside Pasta Shells With Zucchini & Spinach but it marries well with any pasta! I use Dee514's Italian Blend Spice Mix rather than a store-bought mix.

SERVES 4 (change servings and units)

    Remove any clinging fat from the chicken and discard; wash and pat dry.
  2. 2
    Lay chicken between sheets of waxed paper- I save cereal box liners for this purpose; gently pound with the fleshy part of your fist (or a meat mallet) to flatten slightly.

    Rub all over with Italian dressing& let it sit while measuring out the remaining ingredients.
  4. 4
    Combine bread crumbs and seasonings on a piece of wax paper.
  5. 5
    Spray a large non-stick frying pan with cooking spray and place over medium heat.
  6. 6
    When hot, dredge dressing coated breasts through the bread crumb mixture and sauté until golden, about 5- 8 minutes per side.

    Spoon some spaghetti sauce on top of each breast, sprinkle with Parmesan& top with mozzarella; cover pan and continue to cook over medium heat until sauce is hot and cheese melts, about 3-5 minutes.

Our lovely hostess Country Lady made this dish as well as her AWESOME pasta shells for a lunch she hosted for my birthday, and all I can say is WOW, this is the way I will forever make Chicken Parmesan, and it looks easy, and it is low fat, it's all good! Thanks so much CL

    I've been looking for tasty, low fat recipes to make since being on my diet when I stumbled on this one. This not only was a hit with me but my family thought it was out of this world! I did decrease the bread crumbs to 1/4 c and replaced with 1/4 c parmesan cheese (less wheat). Served with pasta (for the family - not me) green beans and salad. This definately is a keeper! Thanks Country Lady.

    This was really yummy! We all enjoyed it--especially my husband. We were excited about having some leftovers too. I served it with buttered linguini and green beans. I called it pizza chicken for the kids and that seemed to go over well.
