i also omitted the thyme and potatoes. I added one can of evaporaed milk and garlic. only one think could of made it better- my moms homeade noodles! this soup def. tastes better the next day. very easy to make! my fiance even ate it and hes extremely picky eater so im very happy! added: this soup tasted even better on the 3rd n 4th day. I've never had soup this good before. I also added alittle laurys seasoning. On the first day is tasted completely blah and i just couldnt believe how the seasonings really soaked in! This is the best chix soup ever! thanx!

Really enjoyed this!!! I altered the recipe a bit though, taking out the onion and potato and using chicken stock instead of broth. Next time I think I'd leave out the thyme and poultry seasoning as it was too noticeable in the broth and hubby didn't care for it. I think the stock already has a bit of both however. Still a really good simple recipe that was a hit. Thank you!

I've also found that if you add a can of evaporated milk when you add your chicken and noodles, it thickens the soup up and makes it nice and tasty.
