Chicken Melt

I enjoyed this sandwich at The Smokestack in Thurber, TX. It is a chicken version of the popular patty melt. Sort of a chicken grilled cheese. Prep time includes grilling a chicken breast.

SERVES 1 (change servings and units)

Ingredients

Directions

    Saute onion in half the butter till golden.
  2. 2
    Set aside.
  3. 3
    Heat non stick pan.
  4. 4
    Spread butter on both slices of bread.
  5. 5
    Place one slice of bread, buttered side down in pre-heated pan.
  6. 6
    Put one slice of cheese, onions, chicken breast, one slice of cheese and then the remaining slice of bread with the buttered side up.

    Continue to cook until bread on bottom is brown and toasty.
  8. 8
    Turn the entire sandwich and toast the other side and wait for cheese to get melty.

    SLice in half and enjoy.

Oh my goodness, I LOVED this sandwich. I generally enjoy a sandwich anyway, but this one made me sad when it was gone (but it'll be lunch today). I used a very dark rye, and baby swiss, which I recommend. I did cut the chicken breast into bite-sized pieces, which worked well. Yum!!

    So simply and so full of flavor. I love it. I used chicken tenders and marinated them in some seasonings, grilled them up alongside the onions, and then assembled and grilled the sandwiches on our george foreman grill. Wonderul. We really liked this and will definitally be making them again. Thanks Riff!

    I was looking for something different to do with my boobs and it was suggested I give this one a try. I marinaded the chicken for about 30 minutes prior to grilling and assembled the rest of the sandwiches while the breast were grilling. Quick and easy and the meat very juicy. My family really enjoyed these and I think we will be making these a lot this spring. Thanks Riff! These are a real treat!
