Chicken Lettuce Wraps Like Pf Changs - Copycat

I LOVE PF Changs Lettuce Wraps, but we live a long distance from the nearest of their restaurants. When I start craving their lettuce wraps, I make this copycat recipe, and my husband says they are even better than Changs. You be the judge. They are a little work, but well worth the effort.

SERVES 6 (change servings and units)

Directions

    (If you used dried mushrooms, cover mushrooms with boiling water, let stand 30 minutes then drain.) Cut and discard woody stems from mushrooms. Mince mushrooms. Set aside.

    Mix all ingredients for cooking sauce in bowl, and set aside.
  3. 3
    In medium bowl, combine cornstarch, sherry water, soy sauce, salt, pepper, and chicken. Stir to coat chicken thoroughly. Stir in 1 teaspoons oil and let sit 15 minutes to marinate.

    Heat wok or large skillet over medium high heat. Add 3 TBSP oil, then add chicken and stir fry for about 3-4 minutes. Remove from pan and set aside.

    Add 2 TBSP oil to pan. Add ginger, garlic, chilies(if desired. I leave these out), and onion; stir fry about a minute or so.

    Add mushrooms, bamboo shoots and water chestnuts; stir fry an additional 2 minutes.

    Return chicken to pan. Add mixed cooking sauce to pan. Cook until thickened and hot. Break cooked cellophane noodles into small pieces, and cover bottom of serving dish with them. Then pour chicken mixture on top of noodles. Spoon into lettuce leaf and roll.

Alrighty, just got outta the kitchen after making these..and yes, I am pooped. But seeing my hubby's reaction while he was eating it was well worth it! He is a big time PF Changs lettuce wrap lover and he says these taste very close. Definetly a weekend meal but definetly worth the time!! I actually doubled the entire recipe and will be taking it to a pot luck at work so...we'll see how it goes there

    Very good! I'd make sure to use ground chicken the next time. All I could find was ground turkey and it's not as good. This recipe took quite a bit of prep time, but it was worth it.

    This is a prettty good recipe however, I remember a sauce or a dip that goes along with it while you are eating it don't get me wrong very tasty! Oh yeah, if you want the same consistancy as the bean thread noodles at pf changs DO NOT follow package directions. They tell you to soak noodles in wa.ter. That is not how it is done. Simply heat a light tasting oil (like vegetable) and submerge them for about ten seconds. The noodles expand and have that crispy light texture like you see at pf changs. Thanks for the tasty dish!!!

    This was good. It is a little thicker than PF Changs, but good. I made a sauce to go with it that was really good. Special Sauce ¼ cup sugar ½ cup water 2 tablespoons soy sauce 2 tablespoons rice vinegar 2 tablespoons ketchup 1 tablespoon lemon juice 1/8 teaspoon sesame oil 1 tablespoon Chinese hot mustard 2 teaspoons water 1-3 teaspoon garlic and red chili paste I heated the sauce on the stove and thickened with cornstarch to the desired consistency.
