Tender marinated chicken and a creamy cucumber yogurt sauce tucked into a pita, topped with lettuce and tomato if you like. Sounds like a great lunch to me! Cooked in or outside! Note: time to make does NOT include 1 hour marinating time. from TOH... ZWT Greek and US Regional - East Coast

SERVES 2 (change servings and units)

Ingredients

Directions

  1. 1
Combine lemon juice, oil, 1/2 t of the garlic, mustard and oregano in a gallon zip top plastic bag.
  2. 2
    Add chicken and seal bag.
  3. 3
Turn bag and gently move chicken around to distribute marinade evenly.
  4. 4
    Refrigerate at least 1 hour.
  5. 5
In a small bowl combine cucumber, yogurt, dill and remaining garlic. Cover and refrigerate until serving. (NOTE: Cucumbers have a lot of moisture in them so if you want your sauce to be less runny really drain them well and squeeze the water out if you want.).
  6. 6
    Drain chicken, discarding marinade.
  7. 7
In a large nonstick skillet saute the chicken for 7-8 minutes or until juices run clear.
  8. 8
Spoon half the chicken on each pita and top with cucumber mixture and sliced onion.
  9. 9
Lettuce and tomato may be added if you like.
  10. 10
    Fold in half and enjoy.

Awesome recipe! I actually tripled the recipe because I am cooking for teenagers. It was a hit with everyone. Easy and delicious. What more could one want? Thanks for the great dinner!

We have just eaten this as a lovely light dinner! So easy to make too! I marinated for a lot longer than an hour and left the cucumber out of the sauce, added some garlic and lemon juice, and used greek style yoghurt. We made our pitas with lettuce and tomato as well as onion - delicious! Thanks for posting!

The chicken flavor from the marinade was delicious, and the meat was so tender. The taste of these gyros is really fresh and nice. My only suggestion for improvement is to thicken the sauce - it turned out pretty runny for me. Next time I'll let the yogurt drain through cheese cloth overnight to thicken it up (or try to find the really thick Greek yogurt). I'll also seed the cucumbers first, and squeeze all the liquid from them before adding to the sauce. Great, easy weeknight meal. Thanks mama's kitchen.
