Chicken Cordon Blue Panini

I love panini's and this one sounds great. From Every Day with Rachael Ray June/July 2008. "A panini is a supertasty sammie because it's crunchy on the outside and soft and warm on the inside. If you're not a blue cheese fan, use your favorite cheese instead."

SERVES 4 (change servings and units)

Ingredients

  • 4 soft sandwich buns
  • 1/8 cup white meat rotisserie-cooked chicken
  • 4 slices deli ham
  • 3/4 cup crumbled blue cheese
  • 1/2 cup ranch dressing

Directions

  1. 1
    Preheat panini press. Place the roll bottoms on a work surface and top with the chicken and ham.
  2. 2
    In a small bowl, mix cheese and ranch dressing and spread on the cut side of the roll tops. Cover the sandwiches with roll tops and place in the panini press. Cook for 3-4 minutes.

This is a great tasting sandwich. I used Cheddar,as the fridge was devoid of blue cheese,but I'm looking forward to trying it with it. A really filling and delicious sandwich-thanks Shelby Jo!

    I love Cordon Blue and this was great. I don't have a panini maker but now I have a reason to get one. I used a small cast iron skillet to weigh it down.

    YuMmY!! What a great sandwich. I made exactly as stated. I dont have a panini press so I used my George Forman grill and also our sandwhich maker to make these both worked great. Thanks for posting! Made for 123 Hit Wonders!!

    This is really yummy and makes a great lunch. I think I would also like to try it with Swiss cheese in place of the blue cheese. Thanks for posting!
