Chicken Cordon Bleu Casserole

My family loved this recipe. All the flavors of the real deal, only quicker to put on the table. It would be a lovely brunch dish too.

SERVES 4 -6 (change servings and units)

Ingredients

  • 2 lbs skinless chicken breasts, cut into bite-size chunks
  • dry breadcrumbs
  • 1/2 cup milk
  • 1 egg, mixed with the milk
  • 8 ounces swiss cheese, cubed
  • 8 ounces ham, diced

  • 1 (10 3/4 ounce) can cream of chicken soup
  • 1 cup milk

Directions

  1. 1
    Dip chicken in egg and milk mixture, then toss with bread crumbs, coating well.
  2. 2
    Brown in a little oil until golden.
  3. 3
    Place chicken in a baking dish, add cheese and ham.
  4. 4
    Mix soup with 1 cup of milk and pour over all.

    Bake at 350°F for 30-35 minutes, or until tender and bubbly.

Good! I made a few changes, like using less ham and chicken and adding in some potatoes. It turned out yummy and just slightly soupy. Thanks!

    Very Good! Except I didn't cube my checken.. i left the breasts whole.. then poured that milk/soup mixture, then topped with the ham and cheese

    I already reviewed this but made a time-saving adjustment the last time I did this. I par cooked the chicken and cubed it. I sprinkled the breadcrumbs on top of the completed casserole, and dotted with butter. That way you got the great flavor the breadcrumbs add without having to take the time to fry up the chicken! A big time saver! Just had to share.

    This is my second review...I didn't have ham on hand today, so I subsituted cook and crumbled bacon which gave it a completely different flavor. We loved it.
