Chicken Breasts in lemon cream sauce

My family loves chicken and this is a quick & tasty way to spruce up the ever day bird. We love this over all types of pasta.

SERVES 6 (change servings and units)

Ingredients

Directions

    Melt 3 tbs butter in a large skillet over medium heat.
  2. 2
    Add mushrooms and saute until tender.
  3. 3
    Remove with a slotted spoon and set aside.
  4. 4
    Sprinkle chicken with salt& pepper, dredge in flour, shaking off excess.
  5. 5
    Melt remaining 3 tbs butter in skillet.
  6. 6
    Add chicken and saute 5 to 6 minutes on each side or until golden brown.

    Transfer chicken to a serving platter (keep warm).

    Add broth to skillet, scraping up browned bits.

    Bring to a boil, reduce heat and simmer until reduced to approximately 3/4 cup.

    Stir in cream and lemon juice.

    Cook over medium heat until slightly thickened.

    Stir in mushrooms, white pepper& salt to taste.

    Add chicken and simmer for 15-20 minutes or until sauce is a medium thick consistency.

    Serve over rice or noodles.

Great!! I will definitely make this again! I left out the pepper and instead added lemon pepper seasoning to give it the extra lemon kick I thought it needed. Maybe my lemons were just a little weak though. This would be a great meal for company - you could just make extra sauce and throw it in a crockpot to keep it warm.

    DEE-licious ! The usual "What to do with chicken--" — had the mushrooms, cream, and broth. Used my LAST package of "Instant" mashed --UGH — but the sauce covered the taste nicely. DH's first bite was "LIKE this sauce !":. Will be preparing again when all the DD and DGKs are here. Thanks for posting, Just Cher.

    This recipe was delicious with a subtle hint of lemon. I made the recipe exactly as written and served it over egg noodles with a salad and garlic bread. Thanks for a great recipe!
