Chicken & Bacon With Penne Pasta in a Creamy Garlic Tomato S

My boyfriend "threw this together" one weekend for lunch. It's super easy to prepare, and even easier to eat!!!! He is SOOO proud of himself, and everyone that has tried it, has loved it!

SERVES 6 (change servings and units)

Ingredients

Directions

    Cook the pasta, drain and set aside.
  2. 2
    Pan fry the chicken and bacon in a little olive oil until cooked and set aside.
  3. 3
    Saute the onions and garlic in a little olive oil until tender.
  4. 4
    Add the diced tomatoes and heat through.
  5. 5
    Add the chicken stock and allow to simmer for a few minutes.
  6. 6
    Return the Chicken and Bacon to the pan and heat through.
  7. 7
    Add the cream and bring it all to a simmer.
  8. 8
    Add the cheese and stir through until melted.
  9. 9
    Toss the pasta through the sauce and heat.
  10. 10
    Add the spinach and then turn the heat off so it wilts.
  11. 11
    Season with salt and pepper.

    ENJOY!

I made this for my family on a busy day. Mom was headed to work, dad was at work. Sisters had cheerleading and marching band practice. Eveyone came home to a yummy lunch. It tasted so good. I loved how you could taste the bacon in the chicken. I used sunburned tomatoes and it was fabulous. I plan on trying it with pork, and throwing in some mushrooms as amela02 suggested. My sister has requested this for her birthday dinner! 12 thumbs up from my entire family.

    We made this the other day... SO good! We added mushrooms, and needed to add a bit more cream because it made the sauce so thick. Otherwise, I wouldn't change a thing. Definitely plan on making it again!
