Cherry-Walnut Breakfast Couscous

This can be eaten for breakfast or as a dessert. Dried cranberries can be subbed for dried cherries.

SERVES 2 , 2 cups (change servings and units)

Ingredients

Directions

    In a medium bowl, combine all ingredients except water.

    In a medium saucepan, bring water to a boil.
  3. 3
    Stir in couscous mix, cover and remove from heat.
  4. 4
    Let stand for 10 minutes.
  5. 5
    Stir with a fork. Serve plain, or with milk.

I'm a great fan of couscous in all it's varieties and incarnations. This is a very good one. From personal choice I didn't use the milk in the recipe but had a cup on the side. I cut this recipe to 3/4 of a serving and used 1/2 a tsp of Splenda Brown Sugar and a, well, generous amount of cinnamon. Thanks Mike for a quick and yumm filled brekkie. :D

    This breakfast meal was simple as can be! Made enough for my family of three this chilly Sunday morning. I did reduce the brown sugar to 2 tablespoons and felt that it could have been reduced even further. I used whole wheat couscous, very good, thanks!
