Cherry Tomato and Herb Omelette

Created because the ingredients for RSC#10 were so inspiring! I do hope you will enjoy!

SERVES 2 (change servings and units)

Ingredients

Directions

    Combine all the ingredients, except the sour cream.
  2. 2
    Heat a small nonstick skillet(or omelette pan) and pour in olive oil. Swirl pan to coat with the oil.
  3. 3
    Heat the broiler.
  4. 4
    Pour half the egg mixture into the skillet and cook until set underneath, about 1-2 minutes. Lift sides of omelette with a spatula to check doneness.
  5. 5
    Place the pan under the broiler and cook until omelette is golden on top, about 2 minutes (watch carefully!).
  6. 6
    Fold omelette in half and remove to serving plate.
  7. 7
    Repeat with remaining mixture.
  8. 8
    Top each with sour cream. Garnish with parsley. Enjoy!

My DS simply loved this, I use a whole seeded jalapeno and butter in place of oil, lots of fresh ground black pepper added to this, so good, great recipe Shar!...Kitten

    I really enjoyed this recipe and thought the use of contest ingredients was creative. I especially loved the capers. Our omelettes were light and fluffy and the colors of the finished product were so pretty. I served this for an evening meal as we often enjoy breakfast for dinner. Thank you for your entry in RSC #10!

    I loved these eggs! I picked the tomatoes out of the garden and I beat the eggs cause I like doing that part. I bet Jim liked them too! Thanks Sharon!
