This is a nicely-flavored simple salad that I love and make often in the summer. My husband is not as crazy about tomatoes as I am, but he will eat seconds of this dish. I clipped the recipe out of a newspaper several years ago.

SERVES 4 (change servings and units)

    For some reason, this recipe did not really work for us, as we did not care for the combination of mayo and tomatoes in this dish. I used fresh grape tomatoes from the garden. I doubled all ingredients in the recipe to serve 8 as I was taking it to a family BBQ. After tasting it, DH added some more of the Dijon, salt and loads of pepper, as well as a little cayenne to give it a bit more of a zip. Sadly, the salad went mostly untouched at the party. I'm glad to see so many others enjoyed the recipe; so perhaps it was just personal/family preference. Thanks anyway.

    My Mom and I have made a variation of this for years, using any good tomato, and chopping it coarsely. Also add a chunky-chopped cucumber to it for an even more summery flavor!

    Loved this recipe.The only changes I made was to make a little more dressing and I also added a little sugar and some crisp crumbled bacon! My family loved it, even my dad who is not much on salads like this! great for a quick, tasty and colorful side at any cook out or pot luck! Thanks!
