Cherry Chicken Salad Sandwich

I love the combination of textures in this sandwich. Its classic chicken salad changed up with the addition of dried cherries and pecans.

SERVES 4 (change servings and units)

Ingredients

Directions

    Combine chicken, cherries, pecans, and onion in a bowl.
  2. 2
    Mix mayo, yogurt, and lemon juice.
  3. 3
    Pour over chicken mixture.
  4. 4
    Toss to mix.
  5. 5
    Refrigerate salad for 1-2 hours.
  6. 6
    Split croissants and divide chicken evenly.
  7. 7
    Sprinkle with black pepper before serving.

Very Good! I made this for a picnic for wine tasting and every one loved it! I served it on Mini- Croissants and leaf lettuce. I used Stony Brook creamy top plain yogurt. I will make this again!!

    Yum! Instead of pecans, I used cashews. I also added apples to bulk it up a bit. It was awesome! I had it on wheat bread one day and had it on rye bread today. A nutty multi-grain would also be great with this!

    This was an excellant chicken salad sandwich. I'm not usually a fan...but I loved all the textures and flavors in your recipe. The filling was sweet, tart, tangy, satisfying and very filling. I used a sesame bagel and romain hearts as that is what I had on hand. Thanks for sharing your tasty version, which I will make again.

    This was a nice chicken salad and I enjoyed it, but I felt that it needed a little extra something. I'm not quite sure what - but just something to give it a bit more flavor. Celery would probably make a nice addition too. Thanks for sharing this recipe.
