Cheesy Orzo

This is Rachael Ray's recipe for a great sidedish to use when you're tired of plain old rice (or if you just love orzo, like I do).

SERVES 4 (change servings and units)

Ingredients

Directions

    Preheat an 8-inch pot with a tight fitting cover over moderate heat.
  2. 2
    Add oil, onion and garlic and saute for 2 or 3 minutes.
  3. 3
    Add broth to the pan and bring to a boil.
  4. 4
    Stir in orzo and return to boiling.
  5. 5
    Cover pot and reduce heat to simmer.
  6. 6
    Cook 15 minutes, stirring occasionally, or until liquid is absorbed and orzo is tender.
  7. 7
    Remove lid and stir in cheese.
  8. 8
    Add salt and pepper to taste.

Rach has great recipes. This one is no exception. Very easy to make. I used cheddar and some parmesan because that's what I had. I will make this again for sure because I love orzo.

    I also found this to be very bland. The consistency was fine, but I had to quadruple the cheese and it still didn't have enough flavor. I can't say it was bad at all, just not really great.

    An easy quick recipe which made a delightful change from rice or potatoes. It is also a great base recipe that one can change the cheeses to alter the flavour or add sauteed vegetables such as red peppers, mushrooms and green opions are just some ideas. Thanks for sharing!

    I love Rachael Ray's recipes and this is no exception. This was a great change from regular rice. It really had a nice cheesy flavor. My husband especially liked it.I will definitely be making this again. Roxygirl in Colo.
