Cheesy hamburger soup in about 30 minutes. Great for weight watchers, WW points = 5/serving

SERVES 4 (change servings and units)

Ingredients

Directions

    Spray saucepan with cooking spray and place over medium-high heat. Combine onion, celery, garlic and ground beef in saucepan. Cook until beef is browned. Drain if necessary.

    Add 1/2-1 cup chicken broth and bring to a slow boil. Cover and reduce heat to low until onion and celery are tender, stirring occasionally and adding additional broth if necessary - about 10-15 minutes.

    Once onion and celery are tender, add remaining chicken broth and heat until just boiling.
  4. 4
    Reduce heat to medium-low, add evaporated milk and cubed reduced fat Velveeta cheese stirring continuously until milk is heated through and Velveeta is melted.

    Stir is paprika and black pepper.

I missed a step and didnt get the remaining 2 cups of broth added to the soup but we still enjoyed a very good meal. My DH loves cheeseburger macaroni so I cooked some small seashell pasta and served the soup over the noodles for him. He enjoyed it a lot and it was nice to have a healthier version for him. I had my soup without noodles and enjoyed a creamy thicker soup with a little bit of crunch from the celery. Along with the pepper and paprika I did add some lemon pepper and loved the seasonings. Will make this soup again and get the right amount of broth in there. Thank you Brooke for posting! Made and reviewed for the 123 tag game.

    Very good! I doubled the recipe and made exactly as stated. It had great flavor and didn't taste good for you. The paprika adds wonderful taste to it, too.
