Cheesy Ham and Potato Soup

Comfort soup at its finest! I usually make this to use up leftover ham. This is easy to adapt with other ingredients. I don't put celery in mine. I have added garlic sometimes as well.

SERVES 8 (change servings and units)

Directions

    Combine potatoes, celery, onion, ham, and water in stockpot and bring to boil.
  2. 2
    Then cook over medium heat until potatoes are tender.
  3. 3
    Stir in the chicken bouillon, salt, and pepper.
  4. 4
    In separate saucepan, melt butter over medium-low heat. Whisk in flour and cook stirring constantly until thick.

    Slowly stir in milk as not to allow lumps to form and all milk is added. Continue to stir until thick (4-5 minutes)

    Add in cheese and stir until melted.
  7. 7
    Stir the cheese mixture into the stockpot and cook until heated through. (I also will break up some of the potatoes for thickness. It gets thicker as it cools and next day).

I've had a big bag of potatoes in my pantry and not been in the mood for potato soup but YUM, this is good stuff!!! I used 4 cups chicken broth that I had in the freezer, only used one bouillon and added 1/3 cup diced carrots. Thanks for the recipe!

    Delicious! I made a double batch and put some in the freezer for later. This was a hearty and rich soup. A definite keeper!

    This is delightful, thick and cheesy. I added some corn and a bit of cayenne as well and it was lovely. Thanks for sharing!

    WOW!! Very good!! I also simmered a hambone with the veggies for about hour. I added 1/2 c. of sliced carrots just because I like them in soup and they added some color. I didn't peel the potatoes, either. This is a really good recipe for a cold night. I am serving it with grilled cheddar and bacon sandwiches. Thanks so much for posting. I am going to make this my favorite "leftover ham" recipe.
