Cheesy Cauliflower Soup (Crock Pot/Slow Cooker)

A favorite of mine. This is a great, low carb, easy to make Cheesy Cauliflower Soup!

SERVES 6 (change servings and units)

Ingredients

Directions

  1. 1
    Put cauliflower, onion, celery and chicken stock in crockpot.
  2. 2
    Cover and cook on low for 4-6 hours.
  3. 3
    Puree in blender.
  4. 4
    Return to crockpot and blend in cream, worcestershire and cheese.
  5. 5
    Add salt and pepper to taste.
  6. 6
    Stir to mix.

    We try to have 2 lighter, but warming dinner meals twice a wk on dys DH eats a dinner meal at noon while at work. Soup is ideal for these meals & I esp like no-muss, no-fuss easy-fixes using my crock-pot. I used frozen cauliflower but had yet another prep method when done cooking & b4 adding the cream, WS & cheese. I pulsed the soup (in the crock-pot) w/my Magic Bullet to break up the veggies, but still leave bits of them for texture. The soup is flavourful & was served with Curry and Mayonnaise Rusks by Jewelies + fruit for a rich (but not overly so) & satisfying meal. Made for the PRMR tag game & thx for sharing this recipe w/us.

    I also used fresh cauli in mine,and cooked on the stovetop.I also used some skimmed milk mixed with cream rather than all cream.This was a lovely soup with lovely flavour,that was easy to put together.What more can you ask for?! Made for 1-2-3 Hit Wonders.

    I adapted this to a stovetop method, and it was soooooo yummy! I used fresh cauliflower, and half and half instead of cream. I covered and simmered it on the stovetop for about 25 minutes. I blended it, but left just a little chunks. I added the h&h, worcestershire, cheese and had an awesome soup for lunch! I'm quite positive this is just as awesome with the crockpot method..... and I will do it that way sometime. Thanx!
