I really like recipes that are short, simple, easy, quick, and most of all tasty! This is definitly a good one!

SERVES 4 (change servings and units)

Ingredients

Directions

    Brown beef in skillet, drain fat.

    Add in soup, salsa, water, tortillas, and half of cheese.
  3. 3
    Heat to a boil.
  4. 4
    Cover and let cook for 5 minutes or until hot.

    Add remaining cheese before serving!

I saw this in a magazine and it looked like a super easy recipe and it is. Took about 20 minutes to make. I use flour tortillia which was an option, but I did not care for the flavor. I would probably prefer the corn next time. I also added about 3/4 cup of frozen corn to add a little more dimention in the taste. I would make again, but with some adjustments.

    Made this from a Campbell's add in a magazine and it quickly became a staple in my rotation. Everyone loved it - nice, squishy comfort food and it's super easy. Next time I will mix reduced fat Velveeta in at the end and omit the shredded cheddar. FYI - I wanted to get it down to 7 WW pts/serving, so here's what I did: used 4 flour tortillas instead of 8 which was plenty and decreased the serving size to serve 6 instead of 4.

    This is an easy meal, but the sweet flavor of the tomato soup is too overpowering. And with the tortillas it just ended up as slop.

    I have made this many times over the years with flour tortillas, but this time used corn tortillas and LOVED it! It tasted like a tamale pie, which I am a big fan of. I used scissors to cut the tortillas and took the time to cut them on the smaller side. Thanks for posting! Roxygirl
